A few days ago, we reported that we have gathered and pressed the dried grapes for the production of Vin Santo. The Trebbiano and Malvasia grapes spent over three months on straw mats in our Vinsantaia in order to properly dry. We collected them and placed them in small crates, and then brought them to the winery. The grapes have been unloaded into our press, and the juice coming from them has been analyzed for sugar content and then moved into a stainless steel tank. It will be put into our caratelli barrels in just a few days, when we will remove the 2005 Vin Santo vintage.
