As usual, after the harvest of the grapes we start picking the olives for the production of our Extra Virgin Olive Oil. This vintage is showing very high quality, but low quantities and it will take about 2/3 weeks in total to finish.
After the harvest, the olives are brought to our oil press where they are first washed
Then they are finely chopped, creating a paste of olive oil and pomace.
Afterwards, this paste goes through a machine that separates the pomace from the Olive Oil that is now ready with its beautiful bright green colour. Now it’s time for a bruschetta!
